For the Mutton Frithad I decided to do slightly differently. Marinated the mutton with green masala ad cooked it .Then ground the Frithad masala separately for this curry
Ingredients
For marination
60 gms coriander leaves
10 gms mint leaves
3 to 4 green chilies
1/2 tsp cumin powder
1/2 tsp pepper powder
1/2 tsp turmeric powder
1 tsp Ginger garlic paste m
grind all the above together with some amount of water.
Method
Wash the mutton well, add salt , Little vinegar and turmeric powder
Keep for 15 mins. wash it off well
Pat dry .
Marinate the mutton with the above ground masala for an hour. Add just enough water.
Pressure cook on high ,then low for 15 mins or till done.
Reserve the stock
For the Curry
Frithad Masala
6 Red kashmiri chillies
1 tbsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp pepper corns
1/2 tsp fennel seeds
1/4 tsp poppy seeds
1/4 tsp sesame seeds
1 inch cinnamon
4 cloves
1black cardamom
Dry roast the above ingredients , keep aside
1/4 cup desiccated coconut
dry roast the desiccated coconut
1 big onion sliced and fried with little oil till lightly browned.
Add 1/4 tsp turmeric powder
1tsp ginger garlic paste
small amount of tamarind
Grind all the above roasted spices, desiccated coconut, onions, turmeric powder, Ginger Garlic paste and little tamarind with some amount of water
Ingredients 3
3 onions finely chopped
3 tomatoes finely chopped
Method
Heat up some oil, stir fry the onions till lightly browned, add the tomatoes ad stir fry.
Add in some of the cooked mutton stock , cook till tomatoes are soft.
Add in the ground frithad masala and stir fry for a minute.
Add in the mutton pieces, some of the stock.
Cook for 10 mins.
