Mutton Country Captain is a delicious mutton gravy prepared with a red masala, almonds , raisins and garnished with fried potatoes.
Ingredients
1 kilo Mutton
cleaned washed well
Marinate the mutton with 1 tsp Chili powder, 1/2 tsp coriander powder, 1/2 tsp cumin powder and 1/4 tsp Turmeric powder.
1/2 tsp salt.
Ingredients
Grind to paste
10 Red kashmiri chilies
1 tbsp coriander seeds
1 tsp cumin seeds
1/2 tsp turmeric powder
1 onion sliced
12 almonds
Grind 12 almonds first.
Then add the remaining ingredients mentioned above and grind to paste with some amount of water.

Cut masala
6 onions sliced
4 medium tomatoes finely chopped
2 inch ginger finely chopped
8 to 10 garlic cloves finely chopped
1/2 cup coriander leaves finely chopped
6 green chilies finely chopped
Ingredients
4 medium size potatoes sliced (wafers)
shallow fry in oil
few almonds sliced and few raisins
Method
Heat up 3 tbsp oil fry the mutton pieces to brown .Add this mutton to the pressure cooker with just enough water and pressure cook on high for one whistle then low for 5 mins or till almost done.
In another vessel add ghee fry the sliced onions till almost brown. Add the tomatoes and some of the reserved stock and allow to cook till tomatoes are soft. Add the ground masala and cook for a minute.
Add the mutton pieces and finely coriander leaves mix well . Cook for 2 minutes.
Add salt to taste and 1 tsp vinegar
Garnish with potato wafers, sliced almonds and raisins .
