Cluster Beans Stir Fry / Guvar Bhaji

Cluster beans vegetable with homemade curry powder crafted from a selection of aromatic spices that promise to elevate the flavour of your dishes.



Ingredients


500 grams of cluster beans


2 onions


2 tomatoes


1 green chilli


4 cloves of garlic mashed



Ingredients


Ground masala


1/2 cup desiccated coconut


2 red kasmiri chillies


3 teaspoons of peanut


1/4 teaspoon of tamarind


1/4 teaspoon of turmeric powder


1 teaspoon of homemade curry powder



Method


Step 1


Heat up some oil in a pot , add in the 4 mashed cloves of garlic and sauté lightly.



Step 2


Next , add the 2 finely chopped onions , 1 green chilli slit into half and sauté until onions turn lightly brown.



Step 3


Mix in the finely chopped tomatoes and keep stir frying occasionally on medium flame until they soften.



Step 4


Stir in the ground masala and 1/2 cup water and continue to fry on medium flame.



Step 5


Add salt to taste and allow to cook for a minute. Add the chopped cluster beans and mix thoroughly.



Step 6


Add 1/2 cup water and cook on simmer and occasionally stirring. Cook till done to your liking.



Serve with chapatis or rotis

Homemade curry powder



Curry Powder


Homemade curry powder , recipe 2 , crafted from a selection of aromatic spices that promise to elevate the flavour of your dishes.




Ingredients


50 grams of coriander seeds


25 grams of cumin seeds


25 grams of pepper corn


10 grams of fennel seeds


10 grams of cinnamon stick


5 grams of cardamom


5 grams of cloves


5 grams of mace flower


5 grams of star anise


3 bay leaves


2 pieces of black stone flower/dagad phool


5 grams of Fenugreek seeds


5 grams of nutmeg


5 grams of mustard seeds



Method


Dry roast all the mentioned spices above


And then once cool , powder the spices in a dry grinder and sift.



Total weight : 160 grams



Used for curries, vegetables and for marination.



An alternative to homemade curry powder


For the cluster beans vegetable



1 teaspoon of coriander powder


1/2 teaspoon cumin powder


1/2 teaspoon of pepper powder


1/4 teaspoon of turmeric powder


1/2 teaspoon of fennel powder


1/2 teaspoon of garam masala powder


Grind all of the above-mentioned spices with the peanuts, coconut and tamarind.
