Mixed Vegetable Curry

A  vegetable curry prepared with a mix of veggies like cauliflower, peas , potatoes and  some fresh Fenugreek leaves to add that extra flavour. A blend of my homemade curry and the East Indian bottle masala to give it that wonderful aroma and taste. A finish of coconut milk for that lovely creamy texture .


Ingredients

400 grams cauliflower florets

40 grams of fresh Fenugreek leaves

3 medium size potatoes chopped into cubes

140 gram green peas

Ingredients for the ground paste

2 onions (medium size), sliced

4 green chillies

1/2 teaspoon of turmeric powder

Grind to paste with just enough water.

Ingredients: Spice mix

1 and 1/2 teaspoon of homemade curry powder (recipe 2)

1 tablespoon of East Indian Bottle Masala Powder

1 and 1/2 teaspoon of ginger garlic paste

200 ml thick coconut milk

Salt to taste

Method

Step 1

Begin by heating some  Clarified butter in a pot. Sauté the mixed vegetables on medium flame. Sprinkle some salt and add in 1/2 cup water. Allow to cook till nearly done.

Step 2

Next , blend in the ground paste , ginger garlic paste and 2  cups of water. Add in the East Indian bottle masala powder and curry powder. Allow to cook until vegetables are done to your liking.

Step 3

Finally add the coconut milk, salt if required. Cook for 2 minutes on medium flame.

Homemade Curry Powder  Recipe 2

Homemade curry powder , crafted from a selection of aromatic spices that promise to elevate  the flavour of your dishes.

Ingredients

50 grams of coriander seeds

25 grams of cumin seeds

25 grams of pepper corn

10 grams of fennel seeds

10 grams of cinnamon stick

5 grams of cardamom

5 grams of cloves

5 grams of mace flower

5 grams of star anise

3 bay leaves

2 pieces of black stone flower/dagad phool

5 grams of Fenugreek seeds

5 grams of nutmeg

5 grams of mustard seeds

Method

Dry roast all the mentioned spices above

And then once cool , powder the spices in a dry grinder and sift.

Total  weight : 160 grams

Used for curries, vegetables and for marination.

2 teaspoons of coriander powder

1/2 teaspoon of cumin powder

1/2 teaspoon of pepper powder

1/4 teaspoon of fennel powder

1/2 teaspoon of garam masala powder

1 teaspoon of dry Fenugreek leaves powder
