Christmas Fruit Cake

This is a Christmas Fruit Cake made with only ground almonds and no flour. My elder son Kyle loves this gluten free cake. He would always want me to make this cake for his birthday. Originally it is called a Caprese cake , an Italian flourless cake. A cake made with just almond flour , eggs, butter and sugar. Soon I started creating my own version of this cake, sometimes adding chocolate and this time ,since we are nearing christmas , decided to make a rich fruit cake .

It turned out so well, soft ,moist and yum. This is a quantity of just 125 gms ground almonds.

Since getting almond flour in India is not that easy and even if available , it is expensive. So I just use almonds with its skin and grind. Sifting is very important , so that you get a good flour type texture.

Ingredients


125 gms almonds

60 gms unsalted butter

30 gms sugar

40gms orange marmalade

2 eggs

1/2 tsp baking powder



For the mix fruits

1 tbsp tutti frutti

2 tbsp cherries

1tbsp dried orange peels

1 tbsp black currants


100 ml bourbon or any other type of whisky too will do



Method


First finely chop the dry fruits and add the 100 ml bourbon to it. Keep for 2 hrs. After 2 hrs. start the next procedure.


Powder the sugar and keep aside. Next melt the butter in the microwave and keep aside. separate the yolks from the whites of the eggs. Add a pinch of salt to the egg whites. Grind the almonds and sift well. Grind the remaining grainy remains once again and sift . Add baking powder to it and sift again. Grind the dry fruits along with the liquid to a paste.


In a bowl add the melted butter , egg yolks , powdered sugar and whisk using a hand whisk. Then add the marmalade and the dry fruit paste , whisk all well together. Now using an hand electric mixer whisk the egg whites to stiff .


Add the sifted almond powder and baking powder mix to the melted butter mixture and whisk well. Then gently fold in the egg white using a spatula , a tbsp at a time.


line a baking dish with parchment paper or using a paper mould of any shape you like.

Bake in a preheated oven at 180 degrees.

{brush the parchment paper with oil or butter ,you can do it for the paper moulds too}

This cake comes out very soft and moist , so be gentle when taking out from the baking dish or paper mould.


Total baking time 30 mins also depends on the type of oven you are using ,so check after 20 mins.


For a bigger quantity double the amount.
