This is a christmas cake , a fruit cake consisting of candied peels, cherries , tutti frutti , raisins and currants. These dry fruits are soaked in brandy .
Ingredients
1/2 cup candied peels
1/2 cup cherries
1/2 cup Tuttifrutti
1/2 cup raisins
1/2cup currants
1&1/2 cup brandy
Soak all the above dried fruits in brandy for 3 days
Ingredients
1 cup chopped cashewnuts
250 gms soft unsalted butter
250 gms plain flour
250 gms sugar
3 eggs
Separate the yolks from the whites.
Beat the egg whites with a pinch of salt to stiff.
2 tsp baking powder
1/4 tsp sodabicarb
Sift the flour , baking powder,soda bicarbonate together
Strain the dried fruits keeping the brandy liquid mixture aside to use later
Method
Cream the butter and sugar together. Then add the yolks one at a time and keep mixing using an electric hand mixer. Add 4 to 6 tablespoons of the reserved brandy the mixture and mix in a tbsp at a time the flour mix. Once done at the stiff egg whites and fold well . Lastly add the strained dried fruits and chopped cashewnuts and fold well .
Bake in a preheated oven at 180 degrees till done approximately 1and half hour in an 8 inch round baking dish.
Once cooled poke the cake with a fork or toothpick. Brush the cake with remaining reserved brandy.
Dress the cake with fondant if u like or drizzle with a glaze
For glaze
Icing sugar and Luke water to make a consistency enough to drizzle on the cake
