Rum And Raisin Cake

A quick and easy christmas cake, no soaking of fruits required. Just raisins and rum.


125 gms flour

125 gms fine brown sugar

125 gms butter

2 eggs

1 tsp baking powder

1/4 tsp soda bicarbonate

1/4 cup rum

3/4 cup raisins , finely chop them

extra 1 tsp flour for coating raisins

few extra raisins for sprinkling on the top and little flour to coat the raisins

2 tbsp rum for brushing the cake


Melt the butter and the sugar together in a small vessel or pan on very low flame. Keep stirring till butter melts and sugar dissolves.

Remove from heat .

Sift the flour , baking powder and soda bicarbonate together and keep aside

Using a hand whisk , whisk the two eggs well.Mix the egg mixture and cooled butter and sugar mixture together. Add 1/4 cup rum and whisk . Add the sifted flour , mix a tbsp at a time and combine well with the help of a hand whisk.

Next add a tsp of flour to the finely chopped raisins , coat well, sift . Add these raisins to the batter and fold in with the help of a spatula. Line a baking tin with parchment paper , add this batter .

Take few more raisins , finely chop them, coat with very little flour , sift . sprinkle on the top of the batter

Bake in a preheated oven at 180 degrees for 30 mins or till done

poke holes with a toothpick and brush the cake with rum 2 to 3 times

Lastly dust with icing sugar
