Today made a Rich Fruit Cake for my Husband's Birthday. A Rich Fruit Cake is one of his favourite. This is a Rick Fruit Cake topped with a white chocolate glaze and dark chocolate shavings
Rich Fruit Cake soaked the dry fruits accept the cashews with whisky for 7 days
Ingredients 1/2 cup candied peels 1/2 cup cherries 1/2 cup Tutti frutti 1/2 cup raisins 1/2cup currants 1&1/2 cup whisky Soak all the above dried fruits in whisky for 4 days
Ingredients 1 cup chopped cashew nuts 250 gms soft unsalted butter 250 gms plain flour 250 gms fine brown sugar 3 egg 2 tsp baking powder 1/4 tsp sodabicarb spice powder 1 tsp spice powder ( For the spice powder follow the below mentioned ingredients to make 1 tsp spice powder mix) 1/4 tsp nutmeg 1/4 tsp ginger powder 1 inch cinnamon 5 cloves Sift the flour , baking powder, soda bicarbonate together Strain the dried fruits keeping the whisky liquid mixture aside to use later
Method Cream the butter and sugar together. Then add the eggs one at a time and keep mixing using an electric hand mixer. Mix in a tbsp at a time the flour mix whisking simultaneously till all the flour mix is well incorporated into the egg mixture. Add the strained dried fruits and chopped cashew nuts and fold well with a spatula. Add just 1/4 cup of the reserved whisky and fold well using a spatula. Bake in a preheated oven at 180 degrees till done approximately 1 hour in an 8 inch round baking dish or till done. Once cooled poke the cake with a fork or toothpick. Brush the cake with remaining reserved whisky. first on the top of the cake brush with the reserved whisky after 10 mins then turn the cake upside-down and brush this side ( bottom side) with reserved whisky. Dress the cake with fondant if u like or drizzle with a glaze For glaze Icing sugar and Luke water to make a consistency enough to drizzle on the cake For a white chocolate glaze Melt chocolate in hot milk on a double boiler. Once the chocolate has melted , remove . Then add sifted icing sugar and mix well Add to the cake or drizzle over the cake.
