Red Amaranth / Red Spinach With Black eyed beans/ chawli stir fry
A nutritious stir fry recipe that brings together the rich flavors of red amaranth (also known as red spinach or Lal Maath) and the hearty texture of black eyed beans (chawli) , making it a perfect addition to any meal.
Ingredients
200 grams Lal Maath/ Red Spinach / red amaranth, remove leaves and wash well and keep aside
150 grams of chawli/ black eyed Beans, boil with just enough water. Cook till done to your liking.
3 green chillies finely chopped
6 cloves garlic finely chopped or mashed
1 inch ginger finely chopped
3 onions finely chopped
2 tomatoes finely chopped
Salt to taste
For the spices
1 teaspoon of coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon pepper powder
1/2 teaspoon garam masala powder
1/4 teaspoon turmeric powder
Method
Step 1
Heat up a pan with some oil. Sauté the mashed cloves of garlic and finely chopped ginger.
Step 2
Add the finely chopped onions and sauté until they turn translucent. Add in the finely chopped green chillies and stir fry.
Step 3
Add the finely chopped tomatoes and stir fry. Cook till tomatoes turn soft , stirring occasionally.
Step 4
Add the spice powders and stir fry. Add in the finely chopped red spinach and mix well . Add salt to taste, cover and cook till done to your liking.
Step 5
Finally, add the chawli , mix well and cook for another 2 minutes on low flame.
