Rawas {Indian Salmon}Fish Curry & Fried Rawas (Green Masala Style)

This Rawas Green Masala Curry is prepared using a freshly ground paste of coriander leaves, coconut, spices, and tamarind, giving the curry a mild tang and beautiful green colour. The fish head and tail add extra depth and flavour to the curry.
Alongside the curry, Rawas slices are marinated in simple spices, coated with semolina and rice flour, and shallow fried to golden perfection. A perfect seafood meal that is easy to prepare and ideal for family lunches or weekend meals.
Rawas Green Masala Curry
Ingredients – For the Ground Masala
100 grams fresh coriander leaves with tender stems
4 green chillies (adjust to taste)
2 tsp coriander seeds
1 tsp cumin seeds
1/4 tsp peppercorns
1 cup desiccated coconut or fresh coconut
Tamarind – small ball size
1 large onion, sliced
1/4 tsp turmeric powder
2 tsp ginger garlic paste
Method – Preparing the Ground Masala
Heat a little oil in a pan. Add coriander seeds, cumin seeds, and peppercorns. Stir lightly.
Add sliced onion and green chillies. Sauté lightly until the onions soften.
Add the coconut and stir fry gently.
Add turmeric powder, mix well, and switch off the flame. Set aside to cool.
Once cooled, grind this mixture along with fresh coriander leaves, ginger garlic paste, tamarind, and enough water to form a smooth paste.
Preparing the Curry
Ingredients
1 large onion, sliced
Rawas fish head and tail pieces
Salt to taste
Oil as required
Method
Heat oil in a pan. Sauté the sliced onions until lightly browned.
Add the prepared green masala paste and a little water to adjust the consistency.
Add salt to taste and bring the curry to a boil.
Lower the flame and simmer for a minute.
Add the fish head and tail pieces. Cook gently until the fish is done.
Switch off the flame and keep covered for a few minutes.
Fried Masala Rawas
Ingredients
12 pieces of rawas fish slices
For the Marinade
1/4 tsp turmeric powder
1 tbsp chilli powder
1 tbsp coriander powder
1/4 tsp pepper powder
2 tsp vinegar
1 tbsp ginger garlic paste
Salt to taste
Method
Mix all the marinade ingredients well.
Coat the rawas slices evenly with the marinade and rest for 15–20 minutes.
Mix semolina and rice flour in equal quantities.
Coat the marinated fish slices in this mixture.
Shallow fry in hot oil until golden and crisp on both sides.
Serving Suggestion
Serve the Rawas Green Masala Curry and crispy Fried Rawas hot with steamed rice .
