The first time I actually tasted a potato Salad was in the Caribbean Islands of Trinidad and Tobago. Didn't like it that much at that time, the next time I came across a potato salad was when I visited my dearest friend Nirmala Mary Rego Loved the way Nirmala made the Potato Salad and presented it and It was yummy. I was very much inspired to go for it. So here is my recipe of a Potato Salad .
For my Potato Salad I used finely chopped celery, green chilli to give it a hint of spice along with some mustard sauce, You can add mustard sauce and mayonnaise according to your taste . The crispy bacon bits adds a fantastic taste to the potato salad .
The bacon can always be replaced with chicken ham. following the same procedure. The ham needs to be fried first ,then cut into fine bits.
Potato Salad Ingredients 1 kilo potatoes Boil the potatoes , remove the skin once done. Once the potatoes are slightly warm grate it. So that you get a smooth texture. 200 gms bacon 2 stalks celery, without the leaves chopped fine 4 green chillies finely chopped 1/2 cup mayonnaise or according to taste 2 tsp mustard sauce 1 tsp mixed dried herbs or dried pasta mix 1 tbsp powder parmesan cheese or grated cheddar cheese Salt to taste 1 tsp or according to taste pepper powder.
Method Fry the bacon nicely ,then cut with a kitchen scissor into fine bits.
Mix the mayonnaise, mustard sauce, pepper powder, green chilies, salt to taste, dried mixed herbs and parmesan together.
Add the finely chopped celery and bacon bits to the grated boiled potatoes. Mix in the mayonnaise mixture, mix well.
Serve this potato salad on any crackers or just like my Friend Nirmala served it , in canapes. Another option would be using toasted bread slices, cutting the bread slice into 4 equal squares first , then Toasting each of these square shaped bread piece, adding a good amount of potato salad on it. Sprinkle with chili flakes on the top.
