Carrot and olive salad

Fresh, zesty, and full of vibrant flavours!
Ingredients:
500 grams carrots, peeled and grated
½ cup green olives
1 green chilli, finely chopped
1 tbsp olive oil
1 tsp lime juice
Salt and pepper to taste
1 cup coriander leaves, finely chopped
Method:
1. In a large mixing bowl, add 500 grams of freshly grated carrots.
2. Toss in ½ cup of green olives.
3. Add 1 finely chopped green chilli for a touch of heat.
4. Sprinkle in 1 cup of finely chopped coriander leaves for freshness.
5. In a small bowl, prepare the dressing with:
1 tbsp olive oil
1 tsp lime juice
Salt and pepper to taste
6. Pour the dressing over the salad.
7. Mix everything well until evenly combined.
8. Serve immediately for that perfect crunch!
Tip:
Chill it for 10–15 minutes before serving for an extra refreshing bite.
