A simple and quick pork gravy cooked in a pressure cooker.
Ingredients
3 Kashmiri chillies ( for more spice add 4 )
1/2 teaspoon fennel seeds
1 teaspoon peppercorns
1 tbs coriander seeds
1 inch cinnamon
1 black cardamom
1 star anise
1 big onion sliced
1 tbsp ginger garlic paste
1/2 tsp turmeric powder
Roast the above dry spiced except turmeric powder.
Stir fry sliced onions in little oil
Grind to paste with some amount of water
Ingredients 2
700 gms pork pieces (shoulder piece)
Wash pork well. Add salt , turmeric powder and little vinegar .keep for 15 mins.
Them wash well and pat dry.
1 tsp Chilli powder
1/2 tsp Turmeric powder
Marinate the pork pieces with chilli powder and turmeric powder
2 big onions sliced
Method
Stir fry onions in little oil till translucent. Add the pork pieces and stir fry.
Now add the ground masala and mix well
Add just enough water and pressure cook on high then on low for 10 mins or 15 mins add a tsp of coconut Toddy vinegar
Lastly garnish with coriander leaves and fried potato wedges
{For 1 kilo 200 gms Pork use 8 to 10 kashmiri chilies and double the rest of the ingredients}
