Green Masala Pork Curry

A bold, aromatic curry featuring tender pork pieces simmered in a fresh green masala made of spring onions, coriander, and green chillies .


The addition of soy and oyster sauces in the marinade gives it a deep, savoury flavour, while the final splash of vinegar lifts and balances the curry beautifully. Serve it with steamed rice or pav and enjoy a comforting home-cooked meal that's both hearty and vibrant.



Ingredients



For the Pork:



1.4 kg pork leg piece


Cleaned and washed well



For the Marinade:



2 tbsp soy sauce



1 tbsp oyster sauce



½ tsp red chilli powder



For the Green Masala Paste:



200 grams spring onions (with greens)



40 grams coriander leaves



8 green chillies



½ tsp garam masala powder



½ tsp pepper powder



1 tsp cumin powder



1 tbsp ginger garlic paste



Water as required to grind



Other Ingredients:



3 medium onions, sliced



1½ tsp vinegar



Oil for cooking



Note: Salt is not added, as the soy and oyster sauces already provide enough. Taste and adjust only if needed.



Method



1. Marinate the Pork


In a large bowl, mix the cleaned pork pieces with soy sauce, oyster sauce, and red chilli powder. Set aside to marinate while you prepare the green masala.



2. Prepare the Green Masala


Blend spring onions, coriander leaves, green chillies, garam masala, pepper powder, cumin powder, and ginger garlic paste into a smooth paste using just enough water. Keep aside.



The Curry:


1)Heat some oil in a deep pan or kadai. Add the sliced onions and sauté until they turn light golden brown.



2)Add the marinated pork to the onions. Stir-fry for about 2 minutes to seal in the flavours.



3) Incorporate the Green Masala


Add the prepared green masala paste. Mix well and cook for another 2 minutes, stirring occasionally to let the rawness of the masala disappear.



4) Add enough water to cover the meat. Bring the curry to a boil, then reduce the heat to low and simmer until the pork is tender and cooked through. Stir occasionally and adjust the consistency as needed.



5)Once the pork is cooked to your liking, add vinegar and cook for another minute to bring out the flavours.
