Nevris/Neureos / Karanji

A very delicious tea time treat and sweet made also during Indian festive season. A pastry dough made with flour , hot melted ghee/clarified butter and warm milk or water. A sweet filling of desiccated coconut, fine semolina , dry fruits and sugar is prepared.


For the Pastry

150 gms flour

30 gms hot melted ghee

Salt to taste

Lukewarm water to help form a dough/ or milk


In a bowl combine the flour , salt together.

Then add in the hot melted ghee and rub the ghee into the flour evenly with your hands or using a spatula.

Add in little amount of lukewarm water or milk at a time to form a smooth soft dough. Keep to rest for 30 mins.

Divide the dough into equal parts, add a drop or two gel colour of choice.

Knead into the dough well .

Divide the dough into small balls and roll them out.

For the Filling

3 tbsp ghee

30 gms finely chopped raisins

2 tsp rose essence

50 gms sugar powdered

100 gms desciated coconut

25 gms rawa

40 gms almond grind to powder

40 gms raisins

40 gms tutti frutti

40 gms dates finely chopped


1)Heat up a tbsp of ghee.

2) Add in finely chopped Raisins , tutti frutti, dates and fry lightly.

3) Now add the 25 gms Semolina and fry lightly.Add a 1 tbsp more ghee

4) Add the desicated coconut, ground sugar and powdered almond mix.

On a low flame ,keep mixing and stirring till the mixture is done aroma arises. Add the rose essnce mix well

allow to cool.

Ghee for frying

Heat up the oil on low flame till nice and hot.

Roll out the small balls, place a spoonful of the mixture in the center of the rolled ball.

Coat sides with water, form a semi circle , press the sides together well. Make impressions with a fork.

deep fry.

once cool u can dust with icing sugar (optional)
