Mutton Frithad a family-style curry made with tender mutton, carrots, radish, and potatoes. prepared with a rich roasted masala . A wholesome, home-cooked dish that’s hearty, delicious, and perfect for any meal.
Ingredients
1. For Cleaning the Mutton :
1.25 kg mutton, cleaned and washed
1 tsp turmeric powder
1 tbsp vinegar
1 tsp Salt
Method: Mix turmeric, vinegar, and salt with the mutton. Let it rest for 30 minutes, then wash well, drain, and set aside.
2. For Marination :
2 tsp coriander powder
½ tsp cumin powder
¼ tsp garam masala
¼ tsp chilli powder
2 tsp ginger garlic paste
¼ tsp turmeric powder
Method: Mix all ingredients with the mutton pieces and marinate for 15 minutes.
3. Vegetables :
2 medium carrots, cleaned & chopped
3 small tender radish or 1 big radish, chopped
Tender radish leaves & stems, soaked in salted water for 10 minutes, rinsed and reserved
2–3 medium potatoes, chopped
Cooking the Mutton :
Heat clarified butter (ghee) and sear the marinated mutton pieces. Add just enough water and pressure cook for 10–12 minutes.
Add the chopped carrots, radish, and potatoes (reserve radish greens). Pressure cook again for 2 whistles and keep aside.
4. Ingredients for Ground Masala :
10 dried Kashmiri chillies
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp peppercorns
¼ tsp sesame seeds
¼ tsp poppy seeds
¼ cup desiccated coconut / dried (sukka) coconut ( copra)
1 tsp homemade garam masala
¼ tsp turmeric powder
1 large onion, sliced
Small ball of tamarind
Ground Masala Method
1. Dry roast Kashmiri chillies, coriander, cumin, peppercorns, sesame seeds, poppy seeds, and desiccated coconut.
2. Add a little oil and sauté the sliced onions until lightly brown.
3. Grind everything with garam masala, turmeric, tamarind, and just enough water to form a smooth paste.
5. Final Tempering
1 tbsp ginger, finely chopped
1 tbsp garlic, finely chopped
2 green chillies, finely chopped
2 medium onions, finely chopped
1 tomato, sliced
Method
1. Heat ghee, sauté chopped garlic, ginger, and green chillies until aromatic.
2. Add the finely chopped onions and sauté until light brown.
3. Add sliced tomatoes and cook till soft.
4. Add the ground masala and sauté for 2 minutes.
5. Mix in the finely chopped radish greens along with its tender stems and a little of the mutton stock. Cook for a minute.
6. Add the cooked mutton and vegetables along with just enough stock.
7. Simmer for 5 minutes .
