Ingredients

700 grams mixed cold cuts (cocktail sausages, ham, and salami)

3 to 4 green chillies, chopped (adjust to taste)

6 spring onions – slice the bulbs finely, and chop the greens separately

2 medium-sized red onions, sliced

2 bell peppers (1 red, 1 yellow), sliced

7 to 8 medium cloves garlic, sliced

1½ inch ginger, thinly sliced into strips (julienne)

1/2 cup finely chopped coriander leaves along with tender stems

Sauces & Seasoning:

Soy sauce – to taste

Chilli sauce – to taste

Vinegar – a dash

Maple syrup – a touch (can substitute with honey)

Salt – as needed

Sesame oil – for stir frying

Method

1. Heat a little sesame oil in a large pan or wok over medium flame.

2. Add the sliced ginger, garlic, and green chillies.

Sauté until they release their aroma and turn lightly golden.

3. Add the mixed cold cuts — sausages, ham, and salami.

Stir fry on medium flame .

4.Next, add the sliced red onions and the bulbs of the spring onions.

Stir well and cook for a couple of minutes until slightly soft yet crunchy.

5. Add soy sauce as per your liking and mix everything well so it’s nicely coated.

6. Toss in the sliced red and yellow bell peppers along with the chopped spring onion greens.

Stir fry for a few minutes — the veggies should remain bright and crisp.

7. Add the finely chopped coriander leaves along with their tender stems.

Mix well for a burst of freshness and colour.

8.Add a mix of chilli sauce, maple syrup (or honey), and vinegar.

Adjust the taste for the right balance of spicy, tangy, and sweet.

Toss everything together nicely.

9. Taste and adjust the seasoning if needed.

Give it one final stir and turn off the heat.

Serving Suggestion

Serve hot as a side dish with dal and rice, or toss in some cooked noodles or rice for a complete one-pan meal.

You can experiment with different types of cold cuts or even add mushrooms for an extra layer of texture and flavour.
