Mix Vegetable curry


Mix Vegetable curry is a flavourful dish that combines a mix of fresh vegetables with aromatic spices and creamy coconut milk. A perfect wholesome meal.


Ingredients

1 sliced Onion

1 inch galangal mashed

4 garlic cloves

3 kashmiri Chillies

2 inch fresh turmeric

1 inch ginger

1 tbsp coriander seeds

1 tsp pepper corn

1 tsp garam masala powder


Grind all the above to a paste with just enough water and keep aside


300 grams green Brinjal chopped into pieces

200 grams Drumstick 200 gram cleaned ,cut into pieces

200 grams red Pumpkin chopped into pieces


200 ml coconut milk

10 fresh basil chopped roughly

3 lime leaves

1 tomato sliced

3 green chillies slit


Method


Step 1

Heat up a pan with some oil, and stir fry the mixed veggies on medium f

lame. Add salt to taste and stir fry.


Step 2

Add the sliced tomato and stir fry. Add in the ground paste and 2 cups of water. Allow to cook for 2 minutes. Next , add in lime leaves and basil leaves. Allow to cook till vegetables are done to your liking.


Step 3

Add the coconut milk and 1/2 cup water.

Finally add in some salt if required and slit green chillies.


Serve with some rice
