Potato and French Beans Curry
This Potato and French Beans Curry is a wholesome, satisfying meal that is both nutritious and delicious. Ideal for a quick weekday lunch .Made with simple ingredients and aromatic spices . The addition of coconut milk adds a rich, creamy texture, while the optional East Indian Bottle Masala or Malwani masala infuses the dish with an extra layer of flavour. Paired with a lovely Jeera rice
Ingredients
3 medium size potatoes chopped
200 grams of french beans chopped into small pieces
Ingredients for the curry
2 onions finely chopped
2 tomatoes finely chopped
1 green chilli finely chopped
1/2 cup finely chopped coriander leaves
2 teaspoons of ginger garlic paste
1/2 teaspoon of chilli powder
1 teaspoon of coriander powder
1/2 teaspoon of cumin powder
1/2 teaspoon of pepper powder
1 stock cube
1 and 1/2 cup water
200 ml coconut milk
1 teaspoon of East Indian Bottle Masala or Malwani masala ( this masala adds an extra flavour to this vegetable curry)
Or substitute the East Indian Bottle masala with 1 teaspoon of chilli instead of 1/2 teaspoon of chilli powder
Method
Step 1
Sauté the finely chopped onions until they turn lightly brown. Next , add in the finely chopped tomatoes , chopped green chillies and cook till soft and done. Add the ginger garlic paste and stir fry.
Step 2
Incorporate the spices ( chilli powder, cumin, pepper, turmeric and coriander powder) ,add 1/2 cup water and allow to cook for a minute.
Step 3
Add the chopped potatoes and allow to cook for 2 minutes, stirring occasionally. Mix in the chopped french beans , stock cube and 1 cup water. Allow to cook till almost done.
Step 4
Add the 1 teaspoon East Indian Bottle Masala powder or Malwani masala powder ,
1 cup water and cook till done to your liking.
Add the 200 ml coconut milk and cook for 2 minutes. Finally, add the finely chopped coriander leaves.
