This recipe for Methi, Corn, and Paneer Sabji is a delightful and nutritious vegetarian dish that combines the distinct flavours of fenugreek leaves (methi), sweet corn, and soft paneer (cottage cheese). The bitterness of the fresh fenugreek leaves is beautifully balanced by the natural sweetness of corn and the richness of paneer, creating a dish that is both flavourful and wholesome.
Ingredients
3 bunches of Fenugreek leaves
Clean, remove the leaves , wash well , and keep aside .
3 corn cob , take the kernels off the cob and keep aside .
200 grams of paneer , chopped into small cubes
3 finely chopped green chillies
2 medium onions sliced
2 medium sliced tomatoes
Salt to taste
6 cloves of garlic mashed
Spice powders
1 teaspoon of coriander powder
1/2 teaspoon of cumin Powder
1/4 teaspoon of chilli powder
1/4 teaspoon of garam masala powder
Method
Step 1
Heat up a pan with some oil , sauté the mashed garlic cloves lightly. Then , add the sliced onions and sauté until they turn translucent.
Step 2
Once the onions turn translucent, add the sliced tomatoes and cook till they turn soft and done. Mix in the finely chopped green chillies and corn kernels and stir fry.S
prinkle in some water and allow to cook.
Step 3
Add salt to taste, spice powders and give it a stir. Add in the Fenugreek leaves and mix well. Allow to cook till done. Finally, add the chopped paneer cubes and stir fry lightly. Cook for 2 minutes.
