Goan Beef Xacuti


For Sunday Lunch Beef Xacuti Served With Pulao


Indulge in the absolutely flavourful and aromatic Beef Xacuti, where spices and chillies are dry roasted along with coconut. This ground paste elevates the taste of the beef and potatoes, adding a lovely texture to the curry.



Ingredients

1 kg beef steak sliced

Further cut into 2 inch pieces

Wash well, add a tablespoon of gram flour, a tablespoon of vinegar and a teaspoon of salt. Keep aside in a strainer/ colander for at least half an hour. Next , wash off well and pat dry.


Ingredients

3 medium size onions sliced

2 medium size tomatoes sliced

3 tablespoons of clarified butter/ ghee


Method

In a pressure cooker, sauté the sliced onions in clarified butter until they turn lightly brown.

Add the beef pieces and stir fry on medium flame for at least 1 minute .


Add in the sliced tomatoes and stir fry. Add salt to taste and just enough water. Pressure cook on High flame. After the first whistle , lower the flame and pressure cook for 15 minutes.


Once the steam is released, add 3 medium size chopped potatoes and pressure cook for 2 whistles on high flame. Keep aside.


Ingredients for the Xacuti Masala

8 to 10 dry bedgi chillies

1 cup desiccated coconut

1 tablespoon of coriander seeds

1 teaspoon of cumin seeds

1 teaspoon of pepper corn

1/2 teaspoon of fennel seeds

1/4 teaspoon of Fenugreek seeds

1/4 teaspoon of sesame seeds

1/4 teaspoon of poppy seeds

1 black cardamom

1/2 star anise

1 inch cinnamon stick

6 cloves

1 mace flower

1 bay leaf


Dry roast the above mentioned spices , chillies and desiccated coconut well.


Ingredients

1 onions sliced

1/2 teaspoon of turmeric powder

1 tablespoon of ginger garlic paste

1/2 cup finely chopped coriander leaves


Add a little oil and stir fry the sliced onions until they turn lightly brown.

Grind to paste the roasted Spices, chillies, desiccated coconut, stir fried onions, turmeric powder and ginger garlic paste with just enough water.


Method

Heat up some clarified butter in a vessel, add the ground masala and some of the stock of the cooked beef. Allow to cook for 1 minute, occasionally stirring on medium flame.

Add the beef pieces and potatoes and mix well. Add salt to taste. Cook for at least 15 minutes on medium flame.

Finally, add in the finely chopped coriander leaves.


Pulao


For the pulao

Ingredients

4 cups of rice

3 onions finely sliced

1 and 1/4 teaspoon of my homemade curry powder

2 inch cinnamon stick , break into 2

5 green cardamom

5 cloves

1 bay leaf

Salt to taste

Hot boiling water


Method

Wash and soak rice for 15 minutes. Drain and keep aside.

In a pan , Add the cinnamon stick, cloves , cardamom , bay leaf and sauté lightly in clarified butter. Next , add the sliced onions and sauté until they turn brown. Add in the rice and stir fry on medium flame.

Add the homemade curry powder and salt to taste or stock cube and mix well. Pour in the hot water , 1 inch above the rice.

Allow it to come to a boil, lower the flame and cook till done.


Note:

Salt not required if adding stock cube

I have used the potatoes with the skin
