Chicken Mince Vindaloo

Chicken mince vindaloo is a delicious Vindaloo made with chicken mince simmered in a vibrant blend of spices and vinegar , this dish is quick to prepare and perfect for a hearty meal



Ingredients for the Ground Masala:


6 dry Kashmiri red chillies


1 teaspoon cumin seeds


1 teaspoon peppercorns


¼ teaspoon turmeric powder


½ inch cinnamon stick


4 cloves


1 tablespoon white vinegar


3 cloves of garlic (or 1 teaspoon garlic paste)


1 medium-sized onion, sliced


Water, as required for grinding



Method: Grind all the above ingredients into a fine paste using just enough water. Set aside.



Ingredients for Preparing the Vindaloo:


500 grams chicken mince


2 medium-sized onions, finely chopped


½ to 1 cup water (as preferred)


Salt to taste


1 teaspoon white vinegar



Method:


1. Heat a pan with just enough oil to coat the base.


2. Sauté the finely chopped onions until they turn lightly brown.


3. Add the chicken mince and stir-fry until it changes color.


4. Add the prepared ground masala and mix well.


5. Cook for a minute to allow the masala to coat the mince.


6. Add ½ to 1 cup water, depending on your preference for gravy consistency.


7. Season with salt to taste and cook until the mince is fully done and the masala is well absorbed.


8. Finally, stir in 1 teaspoon vinegar and cook for another 2 minutes.


9. Serve hot with rice, bread, or pav.
