Egg Curry with Cuddi Masala

Today's Lunch a simple quick egg curry with cuddi masala ,used finely chopped greens of spring onion for that added flavour


Ingredients

6 eggs

For the masala

1 cup desiccated coconut or fresh coconut

6 green chillies

1 tbsp ginger garlic paste

2 onion sliced

1/4 tsp turmeric powder

2 tbsp East Indian Bottle Masala

1 soup cube

Few curry leaves

and few stalk of only the greens of spring onion


Method

Dry roast the desiccated coconut lightly. Add very little oil and stir fry the onions lightly.

Grind the onions, coconut, green chillies, ginger garlic paste, turmeric powder with some amount of water to a smooth fine paste.

Add 2 to 3 tbsp ghee , few curry leaves ,once it starts to splutter add the ground masala and bottle masala. Mix well , add just enough warm water ,soup cube and bring to a boil on medium flame.

Break each egg into a small bowl and slide this egg carefully into the curry, do the same for all.

Cover and cook till done on complete low flame.

Lastly sprinkle in the finely chopped spring onion greens.
