Curry Pasta With Spinach And Chicken Kebabs


Pasta with Spinach and chicken kebabs tossed with spices , olives and parmesan cheese


Ingredients

150 or 200 gms Pasta of choice

( I have used Spiral pasta)

Heat up enough water, once it comes to a boil add pasta and cook till done or according to packet instruction)


Ingredients

600 gms spinach

Washed well and chopped

6 medium size tomatoes or 4 big size tomatoes sliced

3 to 4 green chillies finely chopped

2 tsp mixed dried herbs ( dried herbs consist of oregano, basil, celery, parsley. Mixed dried herbs , easily available in stores.

Also can go for Italian dry herb mix or dry pasta or pizza herb mix)

6 garlic cloves mashed

Salt to taste

5 chicken kebabs of choice( I have used frozen chicken tandoori kebabs)

1 tsp coriander powder

1/2 tsp cumin powder

1/4 tsp pepper powder

1/4 tsp turmeric powder

1/4 cup black olives

1 tsp apple cider vinegar

1 red bell pepper sliced


Method

Shallow fry the chicken kebabs. Once cool enough cut into round pieces and keep aside. Add oil if required to the same pan , saute the mashed garlic lightly. Add the finely chopped tomatoes and 1/2 tsp salt and cook covered. After a minute add 1/2 cup water and allow to cook till tomatoes turn nice and soft. Add in the spice powders and stir fry. Add the chopped spinach and cook covered. Add the kebab pieces and mix well. Cook for a minute, add the sliced red peppers , olives and salt if required. Lastly add the apple cider vinegar.
