Curry Pasta With Cauliflower And French Bean Stir Fry



For the Pasta


Ingredients


300 gms Pasta

Cook pasta according to packet instructions. Reserve some of the pasta water.


2 green chillies finely chopped

200 gms finely chopped tomatoes

(Approximately 4 tomatoes)

1 tsp ginger garlic paste

20 gms finely chopped only greens of the spring onions.

1 tbsp dried oregano

1/2 tsp chilli powder

1/2 tsp pepper powder

1/2 tsp coriander powder

1/2 tsp garam masala powder

1/4 tsp cumin powder

1 stock cube

1 tbsp butter

2 tbsp oil

200 ml coconut milk



Method


Add oil and butter to the pan, then add the chopped tomatoes and green chillies ,stir fry on medium heat.Add 1/4 cup of the reserved pasta water and allow the tomatoes to cook till soft. Add the stock cube and 1/4 cup pasta water. Mix in the spices of chilli powder, cumin powder, coriander powder, pepper powder ,and garam masala powder . Add in the dried oregano and ginger garlic paste,mix well. Now add the 200 ml coconut milk , mix in the cooked pasta

Lastly toss in the finely chopped greens of the spring onions.



For The Veggies



100 gms french beans, each bean cut into half

300 gms cauliflower florets

1/4 cup finely chopped coriander leaves

1/2 tsp crushed pepper corn

2 green chillies or according to taste

1/2 tsp dried oregano

6 garlic cloves mashed

1 tbsp butter

1 tbsp oil



Method


Add oil and butter to a pan, add the mashed garlic,green chillies lightly stir fry.

Add the cauliflower florets and stir fry for 1/2 a minute, then add the french beans and salt to taste. Add in the crushed pepper corn, oregano and coriander leaves. Cook for a minute.



Cooking Pasta


Bring water to boil, then add the pasta of choice,let it cook on high flame, adding very little oi.


Cook for 10 to 12 mins


Drian out , reserving the pasta water .
