A delicously prepared cake with walnuts, chocolate ,cherries , coffee and rum, Wonderful Tea time treat .
Ingredients
100 gms flour
1/2 tsp baking powder
2 pinch soda bicarbonate
sift all together and keep.
25 gms walnuts Powder it and keep
1 tsp coffee powder
Mix all the above together and keep aside.
2 small eggs
1/2'cup finely chopped cherries
1 tsp rum
and extra rum for brushing the cake
1/2 tsp vanilla essence
100 gms brown sugar
50 gms milk chocolate
100 gms butter
Melt the butter and chocolate on a double boiler.
double boiler ( place a small size vessel filled with water on the gas , bring to a boil and simmer.Place a slightly bigger vessel placing the butter and chocolate in it. Keep stirring till it all melts).
METHOD
whisk the eggs very well , add the brown sugar and whisk again. Mix in the vanilla essence and the rum.
whisk well.
Now add the flour mixture and whisk well.
Lastly add the melted butter and chocolate mix and the finely chopped cherries..
line a 8 inch X 10 inch cookie tray with parchment paper
pour the batter into the tray level it well.
Bake in a preheated oven at 180 degrees for 20 mins or till done. when it is hot brush the cake with rum .
Once done allow to cool and drizzle white melted chocolate over the it
cut into squares.
