Chocolate Coconut Squares

125 gms butter 125 gms sugar powdered 100 gms flour 50 gms desiccated coconut 1 tsp baking powder 2 eggs 1 tbsp cocoa powder 1 tsp vanilla essence 1/4 cup water

Method Melt the butter and powdered sugar together on low flame till butter melts stirring gently. keep aside Sift the flour, baking powder and cocoa powder together. Add the desicated coconut and mix well. Using a had whisk , whisk the 2 eggs well , add the vanilla essence and mix well. Add the egg mixture and the melted butter mixture to the flour mix. Add 1/4 cup lukewarm water and mix well using a hand whisk.

line a baking tray with parchment paper and bake in a preheated oven at 180 degrees. takes approximately 30 to 40 mins.

For the glaze mix in sifted 4 tbsp icing sugar, 2 tbsp sifted cocoa powder and very little lukewarm water mix to form a thick paste. spread this on the cake. sprinkle on the top with desicated coconut.

Cut into squares
