A simple quick Friday Lunch
Fried Chicken wings served with Couscous and some Dahi ( curd)
The chicken wings are marinated with very simple and basic spices.
Couscous is basically a type of pasta ,but has a grainy texture made with semolina flour from durum wheat.
Ingredients
For the chicken wings
9 chicken wings ( total weight 700 gms)
Marinate the chicken wings with the mentioned below spices
1 tsp and a 1/4 tsp chilli powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
1 tsp ginger garlic paste
Salt to your liking
1 or 2 tsp honey
Keep for an hour or 2 hours
Shallow fry these wings well.
For the couscous
1 cup couscous ( approx. 200, cup)
Hot boiling water
1 tsp chilli powder
1 tsp Coriander powder
1/2 tsp garam masala powder
Salt to your liking
1 tsp ginger garlic paste
2 tomatoes finely chopped
4 to 5 bulbs of the spring onion only
1/4 cup finely chopped coriander leaves
Method
Heat up 2 tbsp ghee, once hot add the finely chopped bulbs of the spring onion. Once they get lightly browned and the tomatoes and cook covered till tomatoes are soft.
Add next the ginger garlic paste, chilli powder, coriander powder, garam masala powder.
Then add the couscous and saute for a minute.
Then add salt and hot boiling water just half inch above.
Cover and cook till all water evaporates
Lastly sprinkle with finely chopped coriander leaves.
