Brownies

This Brownie is another recipe , where I have used more yolks and also 2 whole eggs. I have also mentioned a recipe of coconut macroons for the left over egg whites



Ingredients


200 gms dark compound chocolate broken into pieces

200 gms powdered sugar

200 gms butter

160 gms plain flour

1tsp baking powder

2 tbsp cocoa powder

2 tsp vanilla essence

4 eggs , separate the yolks from the whites

keep whites aside

2 whole eggs

1/4 cup rum


Melt the butter, chocolate pieces in heavy based pan using the double boiler method

Once the butter and chocolate almost melt add the powdered sugar and and mix well stirring.

Remove from the double boiler and stir well till well mixed and no lumps


Sift flour , cocoa powder and baking powder together.


Crack the 4 eggs and separate the yolks from the whites.

keeping whites aside.


Lightly beat the yolks with 2 tsp vanilla essence. Keep aside


Add the chocolate mixture and the yolk mixture to the sifted flour mix. Add 1/4 cup rum


Mix well.add the 2 whole eggs and fold gently till well mixed .


Line a baking tray /dish 8inch x 10 inch with baking paper.

Pour this batter into the tray

Bake at 180degrees


It takes approximately 25 mins

It releases from the sides indicating it has baked.and on poking with a tooth pic comes out clean.


FOR THE RUM SAUCE


1/2 cup water

2 tsp cornflour

1 to 2 tsp rum

2 tbsp brown sugar or according to taste


METHOD

heat up the water ,add the sugar and stir till it melts . Add cornflour and mix well till it thickens.

Remove from the gas add the rum and mix well

if the sauce is too thick add little amount of hot water.


drizzle over the brownies


With the leftover eggwhites use the below mentioned Recipe


Coconut macroons

Ingredients

4 egg whites

300 gms Dessicated coconut

Almond essence 1/2 tsp

1 cup sugar ( powder the sugar)


Method

Beat egg whites ( not stiff)

Add 1tbsp at a time powdered sugar and beat lightly

Then add Desicated coconut 1 tsp at a time folding in. Add essence


Grease tray

brush a muffin tray and spoon the mixture into the muffin moulds

Bake at 180 degrees till golden brown
