Warm Sprouted Green Moong, Sweet Corn and Carrot Salad

Healthy protein rich and refreshing salad recipe.
Ingredients
200 grams green moong
1 sweet corn, kernels removed
3 medium carrots, chopped into small pieces
3 to 4 green chillies, finely chopped
3 medium onions, finely chopped
5 cloves garlic, finely chopped or sliced
¼ tsp turmeric powder
¼ tsp fresh dill leaves, finely chopped
Pepper powder, as per taste
Salt, to taste
1 tsp lime juice
1 tbsp oil
For Sprouting the Green Moong
Soak the green moong in water for 6 hours.
Drain well and place in a colander over a vessel.
Cover and allow to sprout for another 6 hours or until the desired length of sprouts is achieved.
Wash the sprouted moong well before cooking.
Method
Steam or boil the sprouted green moong for about 10 minutes. If boiling, drain well and set aside.
Heat oil in a pan and sauté the garlic until aromatic.
Add the chopped onions and sauté until translucent.
Add the chopped carrots and sweet corn kernels. Stir well.
Mix in the green chillies, turmeric powder, pepper powder, and salt to taste.
Cook until the carrots and corn are nearly done but still retain a slight crunch.
Add the cooked sprouted green moong and stir-fry for 2–3 minutes.
Mix in the finely chopped dill leaves.
Finish with the lime juice and give everything a final toss.
Serve warm as a wholesome salad, light meal, or nutritious side dish.
Notes
You can replace dill leaves with fresh coriander leaves if preferred.
Adjust the green chillies and pepper according to your spice preference.
