Warm Cauliflower and Bell Pepper Salad

A light, wholesome, and flavourful warm salad made with lightly sautéed cauliflower florets and colourful bell peppers tossed in a garlicky olive oil dressing with cumin, coriander leaves, and pepper. Finished with chilli flakes and toasted sesame seeds for extra warmth and crunch .
Ingredients
For the Salad
500 grams cauliflower florets
1 yellow bell pepper, sliced
1 red bell pepper, sliced
2 tbsp olive oil
1 to 2 tsp chilli flakes
1 tbsp toasted sesame seeds
For the Dressing
5 cloves garlic, minced
Finely chopped coriander leaves
Pepper powder as per taste
Salt to taste
2 tbsp Worcestershire sauce (optional)
Substitute: fresh lime juice
1 tsp cumin powder
Method
Wash and drain the cauliflower florets well. Slice the bell peppers into medium strips.
Heat olive oil in a broad pan. Add the cauliflower florets and sauté lightly on medium heat until slightly tender with light golden edges.
Add the sliced yellow and red bell peppers and sauté for another few minutes until just lightly softened while still retaining a slight crunch.
In a bowl, mix together the minced garlic, coriander leaves, pepper powder, salt, Worcestershire sauce or lime juice, and cumin powder.
Add the dressing to the warm sautéed vegetables and toss well so the flavours coat evenly.
Finish with chilli flakes and toasted sesame seeds.
Serve warm as a healthy side dish or light meal.
