He had bought Marie biscuits last week — as usual, ate a few and left the rest behind
So I decided the only way to get him to finish them was to turn them into something special.
I had just 60 grams of compound chocolate at home, but plenty of cocoa powder and icing sugar — and that’s how this recipe was born.
Soft, slightly fudge-like, filled with nuts, ginger crystals, a hint of spice and a touch of whisky… topped with cherries and set into little bites of love.
Simple ingredients. Homemade. Made with love for my son
Ingredients
20 grams ginger crystals, finely chopped
40 grams cashew nuts, chopped
40 grams almonds, chopped
40 grams raisins, chopped
10–12 Vita Marie biscuits, roughly broken (not too small, not too big)
1 teaspoon bourbon whiskey (or any whisky)
1 teaspoon coconut oil
40 grams icing sugar
40 grams cocoa powder
½ teaspoon spice mix powder
60 grams dark compound chocolate (C.P. 16)
Cherries, cut into quarters (for topping)
Method
Melt the dark compound chocolate using a microwave or double boiler method. Set aside.
Sift together the icing sugar, cocoa powder and spice mix powder.
Add warm water gradually and mix to form a thick, smooth paste.
Add the melted chocolate to this paste and mix well using a hand whisk or spatula until smooth and glossy.
Add the broken Marie biscuits, chopped dry fruits, raisins and ginger crystals. Mix well so everything is coated evenly.
Add the coconut oil and whisky. Mix again until well combined.
Using a tablespoon, spoon out portions of the mixture onto a tray lined with foil.
Place a quartered cherry on top of each cluster.
Freeze for about 4 hours. Then transfer to the refrigerator for a few more hours to maintain the soft texture.
Place in mini cupcake wrappers before serving.
Texture
These clusters have a soft, slightly fudge-like texture with crunch from the nuts and biscuit pieces, and a gentle warmth from the spice mix and whisky
Double Boiler Method:
Place chopped chocolate in a heatproof bowl over a saucepan with gently simmering water. Make sure the bowl does not touch the water. Stir until the chocolate melts smoothly. Do not let water enter the chocolate.
