Rocky Road Easter Treat

A decadent and festive no-bake delight packed with nuts, dried fruits, and marshmallows coated in luscious dark chocolate. Perfect for gifting or indulging during Easter!


Ingredients:



200 grams almonds, roughly chopped



200 grams cashew nuts, roughly chopped



200 grams cranberries ( no chopping required)



200 grams raisins( no chopping required)



160 grams marshmallows



600 grams dark compound chocolate (CP16)



Hot boiling water



Method:



1. Melt the Chocolate (Double Boiler Method):



Heat a small vessel with just enough water. Once it comes to a boil, switch off the heat.



Place a slightly larger vessel on top, containing the roughly chopped chocolate.



Stir gently until the chocolate melts completely into a smooth mixture.



2. Line 3 trays with aluminium foil and keep them ready.



3.In a large mixing bowl, combine ½ cup each of almonds, cashew nuts, raisins, cranberries, and marshmallows. Mix well.



4. Coat with Chocolate:


Pour in some of the melted chocolate and mix until all the ingredients are well coated.



5. Spread the mixture evenly onto the prepared tray.



Drizzle extra melted chocolate over the top to fill in the gaps and hold everything together.



6. Repeat the Process:


Continue making batches using the same method until all ingredients and chocolate are used up.



7. Refrigerate and Store:


Refrigerate the trays until the mixture sets completely.


Cut into squares and store in airtight containers in the refrigerator.
