Quick easy sambar served with radish beetroot vegetable, rice and fried golden anchovies

Radish And Beetroot Vegetable

Ingredients

2 bunches of small radish (12 pieces)

If using the big size radish then two

Finely slice the radish, finely chop the stem , and finely chop the leaves of the radish.

2 beetroot ( 250 gms) finely chopped

3 green chillies finely chopped

Salt to taste

1 tsp turmeric powder

1 tsp coriander powder

1 tsp lime juice

5 cloves of garlic mashed

2 tomatoes finely chopped


Method

Add oil , saute the garlic cloves. Add the finely chopped beetroot, finely sliced radish, finely chopped stem of the radish , finely chopped tomatoes and finely chopped green chillies. Cook covered on medium flame. After it is nearly done add salt to taste, coriander powder, turmeric powder and cook covered till done. Once done add the finely chopped green leaves of the radish and cook for a minute. Lastly add the lime juice.

For the Sambar


Ingredients

250 gms tuvar dal

Wash and soak the tuvar dal

4 cloves of garlic mashed

1 green tomato sliced

1 tbsp coriander powder

1 tbsp chilli powder

1 tsp pepper powder

1/4 tsp turmeric powder

1 tsp Asafoetida powder/ hing

Salt to taste

1/4 cup finely chopped coriander leaves

Small ball of tamarind. Soaked in 1 cup of hot water for at least half an hour. Remove the pulp and keep aside.

Method

Add oil in a pressure cooker, saute the mashed garlic cloves. Once lightly brown add the sliced green tomatoes ,saute lightly. Add the coriander powder, turmeric powder, pepper powder, chilli powder and asafoetida powder along with 1 cup water.

Allow this to cook for a minute. Add the dal , salt to taste and enough water. Pressure cook on a high for 1 whistle and low for 1 whistle.

Once the steam is released add the tamarind pulp and finely chopped coriander leaves.


For the tadka

3 kashmiri chillies

1/2 tsp mustard seeds

1/2 tsp cumin seeds

Few curry leaves

Oil

Method

Heat up all of this well, once it starts to splutter add this to the dal and mix well.

Fried the Fried Golden Anchovies/ Mandelis

Marinate the fish with chilli powder, coriander powder, garam masala powder, salt to taste and ginger garlic paste.

Coat the fish with semolina and shallow fry
