Sambar/ sambhar is a lentil based curry prepared with spices like coriander seeds, cumin seeds and pepper corn etc. Sambhar pairs well with dosas, idlis or rice .

Ingredients
4 drumsticks
After cleaning and chopping 125 gms
Add just enough water and cook the drumstick till done.
1/4 cup tuvar dal / pigeon pea lentil
Soak this dal for an hour . Then drain and pat dry.
Ingredients for the ground masala
1 tbsp coriander seeds
1/2 tsp cumin seeds
1/4 tsp Fenugreek seeds
1tsp pepper corn
6 curry leaves , washed and pat dry
4 dry kashmiri chilies
1/2 cup desiccated coconut
Dry roast all the spices mentioned above.
Dry roast the tuvar dal lightly
Next add 1/4 tsp turmeric powder ,1 tsp tamarind to the ground spices and dal.
Grind to a paste adding just enough water.
Ingredients
6 curry leaves
1/2 tsp mustard seeds
1 tomato sliced
Salt to taste
1 tsp grated jaggery
Method
Once oil is hot add mustard seeds, curry leaves and sliced tomatoes. Saute the tomatoes for a minute. Add the ground masala , salt to taste, jaggery and 3 to 4 cups of water. Allow to cook for 2 mins.
Then add the cooked drumstick pieces and cook for another 2 mins.
