As we love a fantastic roast chicken ,need to come up with various ways to make each roast chicken taste different and oozing with those delectable flavours. And what way to get it spot on I thought , a roast chicken with a homemade tandoori masala. A tandoori masala that is easily made with spices available in our kitchen. Must say , it turned out divine , so what are u waiting for, give this recipe a try and I am sure you will love it .
Chicken Roast in tandoori masala . This is a homemade tandoori masala , easy to make with ingredients easily available . This quantity of masala is enough for a whole chicken of 14oo gms and 2 chicken legs of 500 gms.
Whole chicken 1400 gms 2 chicken legs 500 gms
Ingredients for the masala
Tandoori masala paste
1tsp fennel seeds 1/4 tsp methi seeds / fenugreek seeds 1 tsp Javitri /mace flower 3 tsp chili powder 1tsp cumin seeds 1/2 tsp pepper 2 tsp coriander powder 1 tsp garam masala 1/2 tsp amchur powder / dry mango powder 1/2 tsp chaat masala 1/4 tsp turmeric powder 2 tsp kasturi methi / dry fenugreek leaves 10 cashew nuts 1& 1/2 tbsp ginger garlic paste 1 cup (200ml curd) /yoghurt 1 tbsp cream Salt to taste A tiny bit of red gel colour (optional)
Method Preheat oven 250 degrees Marinate the whole chicken with the above masala . Rub the masala in between the skin and the meat making sure to release the skin from the meat very slowly as you inch your fingers forward. Also marinate the chicken on top of the skin. Remaining marinade can be used for the two chicken legs which can be baked along .
Place the whole marinated chicken on a baking tray and cover with foil Bake for 45 mins covered with foil ,then remove the foil. Pour the drained juices over the chicken and baked till done about another 45 mins.
