Sweet Vermicelli
A delicious, sweet and aromatic vermicelli dish prepared with ghee, crunchy cashew nuts, plump raisins and a hint of your favourite spice or vanilla essence. Perfect for festive occasions or a special family treat!
Ingredients
250 g roasted vermicelli
120 g cashew nuts
120 g raisins
½ cup sugar (adjust to taste)
1 tsp mixed spice powder, vanilla essence or cardamom powder (as per your preference)
½ tsp salt
Ghee, as required
Hot water, as required
A few saffron strands (optional)
Method
Step 1: Roast the nuts and raisins
Heat some ghee in a pan. Roast the cashew nuts until lightly golden, then roast the raisins separately until they plump up. Remove and set aside.
Step 2: Roast the vermicelli
If using pre-roasted vermicelli, roast lightly in batches with a little ghee until fragrant. Set aside.
Step 3: Cook the vermicelli
Heat some ghee in a pan or vessel. Add the roasted vermicelli and toss well. Pour in enough hot water to cover the vermicelli, then stir gently. Add the saffron strands, if using.
Step 4: Add the sugar and flavouring:
Once the vermicelli is almost cooked and most of the water has been absorbed, add the sugar, salt and your choice of mixed spice powder, vanilla essence or cardamom powder. Mix gently until well combined.
Step 5: Add the nuts and raisins :
Finally, add the roasted cashew nuts and raisins. Give everything a gentle mix and cook until the vermicelli is tender and the flavours come together.
Your delicious sweet vermicelli is ready to serve!
