Gajar Ka Halwa

A dessert made with Red carrots, Milkmaid, dry fruits. Serves 6.


Ingredients1

800 gms Red Carrots

peel off skin wash well , grate and keep aside


Ingredients 2

50 gms almonds chopped fine

And fry in 1 tsp ghee


1/2 cup rasins fry in the remaining ghee after frying the chopped almonds.


Ingredients 3

1/2 cup cashew nuts , grind to Powder

1/2 cup. ghee

2 cups milk

400 gms milkmaid

100 gms mava /milk solids/koya

1and 1/4 tsp cardamom powder

1 tbsp beetroot juice

(grate the beetroot and squeeze out the juice)


Method

Fry the grated carrot in 1/4 cup ghee well at least 2 to 3 mins on medium flame in a thick bottom vessel.

Add now the 2 cups milk and allow to cook till almost all the milk is observed.

Add the milkmaid and another 1/4 cup ghee.

Mix well and cook for 2 minutes on medium flame. Now add the crumble mava mix well

Add the cashew nut powder and cardamom powder and mix well.

Add in the chopped and fried almonds and raisins.


Cook for another 15 mins , continuously stirring

till done, to a thick consistency.
