Stuffed Green Masala Mackerel Fry

A delicious mackerel preparation stuffed with a fragrant green masala and shallow-fried .
Ingredients
6 mackerels, cleaned and slit for stuffing
For the Green Masala
1 medium onion, sliced
5 green chillies, chopped
1 tbsp ginger-garlic paste
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp peppercorns
½ tsp garam masala powder
¼ tsp turmeric powder
1 small ball of tamarind
20 or 25 grams fresh coriander leaves, chopped
1 tsp vinegar (optional)
Salt to taste
Oil for sautéing
For Coating
Wheat flour, as required
Semolina (rava), as required
For Frying
Oil, as required
Method
Prepare the Green Masala
Heat a little oil in a pan.
Add the sliced onions and green chillies and sauté until the onions turn soft.
Add the coriander seeds, cumin seeds, and peppercorns. Sauté for a minute until aromatic.
Stir in the ginger-garlic paste, turmeric powder, and garam masala powder. Cook for another minute.
Add the tamarind and chopped coriander leaves. Mix well and cook briefly.
Remove from the heat and allow the mixture to cool slightly.
Add the vinegar (if using) and salt to taste.
Grind the mixture into a thick, smooth paste, using only a little water if required.
Stuff and Fry the Mackerel
Fill the prepared green masala generously into the slits of each mackerel.
Mix equal quantities of wheat flour and semolina in a plate.
Coat each stuffed mackerel lightly with the flour and semolina mixture.
Heat oil in a shallow frying pan.
Fry the mackerels on medium heat until golden brown and crisp on both sides.
Serve hot with sliced onions and lime wedges.
