Mackerel Fry Served With A Raw Mango Curry



A lip smacking mackerel fry, infused with Thai ingredients perfectly complimented with a raw mango curry , that will leave you wanting more.





Ingredients


5 Mackerels


Clean and wash well. Make a slit on both sides of the fish. Add a mix of salt and turmeric. Keep for half an hour. Wash off well. Pat dry.



Ingredients for the masala


5 Thai chillies ( Thai Bird eye Chillies) or according to taste


2 teaspoons of ginger garlic paste


1 onion sliced


2 teaspoons of coriander seeds


1/2 teaspoon of cumin seeds


1/2 teaspoon pepper corn


1/2 inch galangal mashed


1/2 lemon grass bulb chopped into pieces


1/4 teaspoon turmeric powder


Grind to paste with small ball tamarind and 1/4 cup desiccated coconut or fresh coconut



Grind to paste with just enough water.



Method



Step 1



Add oil in a pan , sauté the ground paste till done on medium flame, occasionally stirring. Allow to cool.



Step 2


Fill the slits of the fish with this ground paste.



Step 3


Add oil in a pan and shallow fry the fish until done.



Raw Mango Curry


5 kashmiri Chillies


1/4 cup desiccated coconut or fresh coconut


1/2 lemon grass bulb chopped into pieces


3 teaspoons of coriander seeds


1 teaspoon cumin seeds


1 teaspoon of pepper corn


1/2 teaspoon turmeric powder


2 teaspoons ginger garlic paste


1/2 inch galangal


1 onion sliced


Grind to a paste with just enough water.



2 mangoes raw , here I have used medium size raw bottle mangoes.


1 teaspoon sugar


6 basil leaves


200 ml thick coconut milk ( dabur coconut milk)


2 cups of water



Method


Step 1


Add oil in a pot , add in the ground paste and 1 cup of water.



Step 2


Allow it to come to a boil. Mix in the chopped raw mango slices along with its seed , salt to taste and sugar.



Step 3


Finally, toss in the basil leaves.
