Stuffed Brinjal with Corned Beef

Crispy, golden brinjal slices filled with a spiced corned beef stuffing, dipped in gram flour batter and shallow fried to perfection!
Ingredients:
For the Corned Beef Filling:
2 onions, finely chopped
3 green chillies, finely chopped
1 can (or approx. 200–250g) corned beef
A generous handful of fresh coriander leaves, chopped
(No salt required)
For the Batter:
3 cups gram flour (besan)
½ cup rice flour
Chilli powder, coriander powder, pepper powder, turmeric powder — as per taste
Salt — to taste
Water — just enough to make a smooth batter
For the Brinjals:
2 large brinjals (approx. 700g total)
Spice mix for coating:
3 tsp chilli powder
3 tsp coriander powder
1 tsp pepper powder
½ tsp turmeric powder
Salt to taste
1 tbsp ginger garlic paste
Method:
1. Prepare the Filling:
Lightly sauté the chopped onions in oil until soft.
Add the green chillies and sauté briefly.
Mix in the corned beef and stir-fry until well combined.
Add chopped coriander leaves and turn off the heat. Let the mixture cool.
2. Slice and Stuff the Brinjals:
Wash and slice the brinjals — not too thin, not too thick.
Make a deep slit or pocket in each slice.
Gently stuff each slice with the cooled corned beef filling.
3. Coat with Spice Mix:
In a small bowl, mix the spices and ginger garlic paste.
Rub this mixture over each stuffed brinjal slice.
4. Prepare the Batter:
In a mixing bowl, combine gram flour, rice flour, and your preferred spices with salt.
Gradually add water to form a thick but flowing batter.
5. Fry the Stuffed Brinjal:
Dip each coated brinjal slice into the batter.
Shallow fry on medium heat until golden and crisp on both sides.
Serving Suggestion:
Serve hot as a snack, appetizer, or side dish with a squeeze of lime and some green chutney or ketchup on the side.
