Stuffed Brinjal With Green Masala

Stuffed Brinjals is a delectable dish that combines the earthy flavours of the brinjals with a rich aromatic masala that is truly satisfying.


600 grams small purple brinjals

Washed well. Make four slits in each brinjal.

For the Masala

100 grams of coriander leaves

4 green chillies

1 teaspoon cumin seeds

1/2 teaspoon peppercorns

1/2 teaspoon turmeric powder

2 teaspoons ginger garlic paste

1/2 teaspoon chaat masala powder

Salt to taste

1 cup desiccated coconut or fresh coconut

1 onion sliced

1/2 teaspoon of garam masala powder

Grind all the above ingredients into a paste using just enough water.


1. Fill the slits in each brinjal with the ground masala.

2. Heat ghee (clarified butter) in a pan.

3. Once hot, add the stuffed brinjals and fry on medium flame.

4. Add the remaining ground masala and 1 cup of water.

5. Cook until the brinjals are done to your liking.
