Masala stuffed brinjals.
Ingredients
10 Kashmiri chillies
1 tsp cumin seeds
1 tsp pepper corns
Dry roast the chillies, pepper corn and cumin seeds
1/2 cup desiccated coconut
dry roast the desiccated coconut
1 big onion sliced and fried in little oil till lightly browned
20 cashew nuts
fry lightly
Method
Grind all the above mentioned ingredients together with some amount of water along with
1/2 tsp turmeric powder
1 tsp garam masala powder
Ingredients
500 gms Brinjals ( medium size)
Method
Make 4 slits to the brinjals. Add a mix of turmeric powder and salt in between the slits . After a minute. add the masala to the brinjals. filling it well into the slits . Add 2 tbsp ghee and fry the brinjals on medium flame.
Once almost done add the remaining ground masala to the same pan. Add in 1/2 cup water and allow to cook for 2 to 3 minutes adjust the seasoning.Garnish with finely chopped Coriander leaves.
Serve with Chapati
For the chapati
Wheat flour , ghee , finely chopped Coriander leaves, Coriander powder, chilli powder ,salt to taste.
Enough water for the dough. knead ,rest for 1/2 hour.
roll out into round shape .
roast the chapati and brush with ghee.
