Roast Pork

Roast pork with roast zucchini and potato skins.


Ingredients

Boneless and skinless pork 1 and 1/2 kg

Add turmeric salt and vinegar keep for 20 mins. Wash well and pat dry


Spice mix

Chilli powder, coriander powder, cumin powder , pepper powder and garam masala according to taste

2 tbsp ginger garlic paste

Mix all the spices with the ginger garlic paste.

Rub this paste on the pork and keep to marinate for 1 hour.

Place in a baking tray pour some amount of good dry red wine on the pork . Cover with foil.

Bake in a preheated oven at 200 degrees for 1 and 1/2 hour .

Remove from the foil , pour the stock that is in the baking dish itself over the pork.

Bake uncovered for another 1/2 hour , in between keep pouring the stock that is still in the Baking dish . Bake till done.


FOR THE ROASTED ZUCCHINI

slice the zucchini and marinade with dry oregano, dry basil ,rock salt , pepper and chilli flakes and garlic cloves and some butter.

Bake in a preheated oven at 200degrees

Approximately 30 mins


POTATO SKINS

Boil the potatoes till 75 %done .Remove before the skins start cracking

Cool and slice into half . Scoop out the pulp to the maximum.

Mash the removed potato pulp and mix with bacon ,pepper ,salt , diced mozzarella or cheddar cheese and chilli flakes

Add this mashed potato mix to the potato skin. Top it with more cheese

Bake at 200degrees for 30 mins
