This quick and nutritious stir-fry combines the subtle sweetness of red pumpkin, the freshness of green peas, and the slightly bitter flavour of fenugreek leaves. Spiced with a blend of turmeric, pepper, and chili, this dish is perfect to serve with chapatis for a simple, wholesome meal.
Ingredients
7 to 8 cloves of garlic cloves mashed
400 grams of red pumpkin peeled and cut into small cubes
100 grams of shelled green peas
200 grams of fresh Fenugreek leaves ( washed well and kept to drain )
2 onions sliced
2 tomatoes sliced
3 green chillies finely chopped

Spice powders
1/2 teaspoon of turmeric powder
1/2 teaspoon pepper powder
1/2 teaspoon chilli powder
Or according to taste
Salt to taste
Method
1:
Heat oil in a pan . Sauté the mashed garlic cloves. Add the sliced onions and sauté until they turn lightly translucent.
2 :
Add the sliced tomatoes , green chillies and stir fry for 2 minutes. Season with salt and mix well. Add the chopped red pumpkin and cook for 3 minutes occasionally stir frying.
3 : Add the green peas and cook until the pumpkin and peas are nearly done. Next , add the roughly chopped fresh Fenugreek leaves and mix well. Cook for 2 minutes.

Add in the turmeric powder, pepper powder and chilli powder. Mix well and cook till done.
