Rajma also known as red kidney beans.This rajma is a thick gravy with spices and herbs.Here I have used Pinto beans which is another type of kidney beans , creamier in texture than the red kidney beans.
Ingredients
250 gms Pinto kidney beans
Soak the kidney beans for at least 6 hrs.
Then wash well, pressure cook with just enough water , add salt to taste.
Pressure cook for 5 whistles on high.
Reserve the water.
Ingredients
2 tsp chili powder
1/2 tsp cumin powder
2 tsp dry oregano
2 finely chopped green chilies
1/2 cup finely chopped coriander leaves
1 tsp lemon juice
3 medium finely chopped onion
4 medium size tomatoes , made into puree
Salt to taste
1 tsp sugar
Method
Add 4 tbsp clarified butter/ ghee , once hot saute the finely chopped onions to light brown.
Add the tomato puree and cook for 5 mins on medium flame, occasionally stirring. Mix in the spices and the dry oregano and finely chopped green chilies. Cook for another 5 mins. Add the cooked kidney beans and 1 cup of the reserved water of the cooked beans . Add salt to taste and sugar, cook for another 15 mins on medium flame.
Lastly add the finely chopped coriander leaves and lemon juice.
