Besan Chillas (Gram Flour Savoury Pancakes) / Vegan Tomato Omelette

These chillas are light, wholesome, and super easy to prepare. At home, they’re always a hit! You can easily switch things up:



Grated carrot can be replaced with grated zucchini or broccoli.



Coriander leaves can be swapped with fresh basil, fresh fenugreek leaves, mint leaves, or even a mix of mint and coriander.

Ingredients (200 ml measuring cup used)


3 cups besan / gram flour


2 cups water


Salt to taste


1 carrot, grated


3 green chillies, finely chopped


1 tomato, finely chopped


A generous handful of coriander leaves, finely chopped


1 tsp coriander powder


¼ tsp cumin powder


¼ tsp pepper powder


¼ tsp turmeric powder


A pinch of chilli powder (or to taste)



Method


1. In a mixing bowl, combine the besan with all the spice powders.


2. Add grated carrot, chopped coriander leaves, green chillies, and tomato to the flour mixture.


3. Gradually pour in water to form a smooth batter. Add salt to taste.


4. To prepare the chillas:


Heat a non-stick pan and pour a ladleful of batter onto it, spreading gently.


Brush the edges with a little clarified butter (ghee).


Flip and cook the other side, brushing the edges again with ghee.


5. Serve hot with chutney, ketchup, or enjoy them as they are.
