Prawns Stir Fry

Something special for my kids today — a quick, flavourful Prawns Stir Fry that's packed with fresh herbs, garlic, and simple spices. The prawns turn out juicy and delicious, while the dill and coriander add a wonderful freshness to the dish. Served with hot dal and rice, it makes a comforting and satisfying family meal.
Ingredients
For Cleaning the Prawns
300 grams prawns, cleaned and washed
A pinch of turmeric powder
Salt to taste
Mix the prawns with turmeric and salt and keep aside for 30 minutes. Rinse, drain well, and set aside.
For the Stir Fry
20 grams garlic, sliced
A few curry leaves
3 to 4 green chillies, slit
¼ cup finely chopped dill leaves
¼ cup finely chopped coriander leaves
Oil as required
For Marinating the Prawns
1 tsp chilli powder
½ tsp cumin powder
¼ tsp pepper powder
Salt to taste
¼ tsp turmeric powder
1 tsp ginger-garlic paste
1½ tsp cornflour
Mix all the ingredients together and coat the prawns well. Marinate for 15 minutes.
Method
Heat oil in a pan.
Add the sliced garlic and sauté until aromatic.
Add the curry leaves and stir fry for a few seconds.
Add the slit green chillies and continue to stir fry.
Add the marinated prawns and cook on medium-high heat, stirring frequently.
Add half of the chopped dill and coriander leaves and stir fry until the prawns are cooked through.
Adjust seasoning if required.
Finish with the remaining dill and coriander leaves and give it a final toss.
Serve hot with dal and steamed rice for a simple, wholesome, and delicious meal.
