Fish Curry, Prawns Stir Fry, Fried Fish & Rice

Today’s meal is a seafood spread with Rawas fish curry, crispy Rawas fry, and a tasty prawns stir fry for the kids – wholesome, flavourful, and perfect for family lunch!


Fish Curry

For the Masala Paste:

• 40 grams of coriander leaves

• 4 green chillies

• 1 tbsp ginger garlic paste

• 1 tbsp coriander powder

• 1 tsp cumin powder

• ½ tsp pepper powder

• 1 tbsp fresh or desiccated coconut

• ¼ tsp turmeric powder

• 1 small ball of tamarind

• 1 onion (chopped)

 Grind all the above ingredients into a fine paste with just enough water. Set aside.

For the Curry:

Rawas (Indian Salmon) – head and tail pieces for curry, reserve the slices for frying

• 80 grams of onions finely chopped (1 large onion)

• 120 grams of tomato finely chopped (1 large tomato)

• 200 ml coconut milk

Method:

1. Heat oil in a pan. Sauté the onions until lightly browned.

2. Add chopped tomatoes and cook until soft and mushy.

3. Stir in the ground green masala paste , salt to taste and 1 cup water. Cook for 2 minutes.

4. Add fish head and tail pieces. Cook until the fish is done.

5. Pour in coconut milk and add water as required to adjust consistency. Simmer for 2–3 minutes.

Prawns Stir Fry

Ingredients:

• 250 grams of prawns (cleaned & washed)

• 15 grams of ginger finely chopped

• 20 grams of garlic finely chopped

• 1 green chilli finely chopped

• 2 stalks celery finely chopped

• 1 bunch spring onion (greens & bulbs chopped separately)

• 1 tsp vinegar

• 1 tsp chilli powder

• ½ tsp pepper powder

• ½ tsp cumin powder

• ¼ tsp turmeric powder

• ¼ tsp chaat masala powder

• Salt to taste

Preparation:

1. Marinate prawns with chilli powder, pepper powder, cumin powder, turmeric powder, chaat masala powder, and salt. Rest for 30 minutes.

2. Shallow fry the prawns and set aside.

Method:

1. Heat oil in a pan. Add ginger and garlic, sauté until fragrant.

2. Add celery and green chilli, stir fry.

3. Add onion bulbs, sauté well.

4. Toss in the fried prawns and stir fry.

5. Add spring onion greens, vinegar, and adjust salt only if needed.

Fried Fish

• Use the reserved fish slices.

• Marinate with 1 tbsp chilli powder, 1/2 tsp pepper powder, turmeric powder, salt, ginger garlic paste and a little lemon juice.

• Coat the marinated fish with semolina.

• Shallow fry until crisp and golden.
