Potato stir fry With Moringa leaves

A delightful combination of potatoes and moringa leaves that is truly satisfying and wholesome.



Ingredients


100 grams of moringa leaves


(Pick out only the leaves , soak in enough water and add a teaspoon of turmeric powder and keep aside for half an hour.


Wash it off well and keep to drain).



500 grams of potatoes Chopped into cubes


And boiled till done .



6 cloves of garlic, mashed


3 green chillies finely chopped


1/2 teaspoon of pepper powder


1/2 teaspoon of garam masala powder


Salt to taste


1/2 teaspoon of turmeric powder


300 grams of onion finely chopped



Method


Step 1


Sauté the mashed garlic lightly in a pan with some oil.



Step 2


Sauté the finely chopped onions until lightly browned. Add salt to taste and finely chopped green chillies and stir fry.



Step 3


Add the moringa leaves and stir fry. Add the turmeric powder . Allow to cook for 2 minutes , stirring occasionally.



Step 4


Now add the boiled potatoes and mix thoroughly. Add in pepper powder and garam masala powder. Cook for 2 minutes. Finally add 1/2 teaspoon of lime juice.



For the mango salad


1 bottle mango , thinly sliced or any other semi ripe mango


Few green chillies or according to taste


Salt to taste


1 teaspoon of Powder sugar or according to taste depending on the taste of the mango 2 onions finely sliced


Few mint leaves and coriander leaves



Mix all the above mentioned ingredients well and serve
